Artichoke

 

A sweet flavoured vegetable,  this gem helps nourish the lungs, relieving asthmatic conditions; treat constipation, and stimulates insulin production and contains inulin, which reduces insulin needs.

Artichoke is also known as "Sunchoke", the sunflower cousin tubers are native to North america, and used to be part of the native american diet.

An autumn and winter veggie, can be eaten either raw or cooked very lightly, too long and they become rubbery.
